Who says you have to give up your favourite spiced drinks when you give up alcohol. Whether you love a clear mind, the extra energy after a big night, or the financial savings that stopping alcohol provides. The one thing you won't have to miss out on is flavour. This virgin dark 'n' stormy will allow you to sit back, relax, and recharge after a busy day without the thumping headache in the hours to follow.
Ingredients you'll need

I always recommend using the best quality ingredients, shopping seasonally, and sustainably sourced when possible. Below is each ingredient you will need:
• Lime juice -
• Caribbean spiced simple syrup or alcohol-free spiced rum - Either a store bought Caribbean style simple syrup or you can make your own simple sugar syrup infused with carribean spices such as cloves, nutmeg, and allspice.
• Light ginger beer - Alcohol-free ginger beer, I opted for the brand Old Jamaica light ginger beer. Alternatively, any alcohol-free ginger beer will do. Alternatively, you can use ginger ale. I find this often creates a lighter beverage.
• Bitters (optional) - If you're on a 100% alcohol free diet and not just a low alcohol diet avoid using bitters are it does use very small amounts of alcohol. It does add to the complex flavour of the drink but still tastes great without it.
• Lime wedges (optional) - Lime wedges are great for adding an extra element and depth of flavour. However, I still find this mocktail tastes great without the lime wedges.
• Ice - If you want an ice cold mocktail, with layers of mint, you can skip the ice.

Can I make this virgin dark 'n' stormy mocktail gluten-free?
As someone with Coeliac disease, all my recipes are 100% gluten-free. However, when making this mocktail, check that the alcohol-free ginger beer or ginger ale you use is gluten-free. The Old Jamaica brand and Tesco's brand are gluten-free in the UK.

How do I store this virgin dark 'n' stormy mocktail?
You can't store this mocktail for extended periods due to the ice melting and the frizz subsiding. It's best to make the mocktail as and when you want to enjoy it. I've even advise making smaller mocktail's over a large shareable jug.
Can I freeze this virgin dark 'n' stormy mocktail ?
You can't freeze this cocktail, as it will lose its frizzle from the ginger beer. Also, you can't turn this into a popsicle even though it uses edible mint leaves. It just wouldn't be a pleasant eating experience.

Here's the recipe for this tropically refreshingly spicy mocktail!
Serves: 1

Cook time: 2 minutes
Special Equipment
High ball glass
Reusable straw
Ingredients
25ml lime juice
25ml Caribbean spiced simple syrup
Ginger beer (ideally, low sugar or light)
2 drops of bitters (optional)
Handful of ice
Lime wedges (optional)
Method
Add your ice to a glass.
Pour in the lime juice, Caribbean spiced simple syrup, ginger beer, and bitters (bitters is optional).
Stir the glass for 15 seconds.
Serve with a lime wedge (optional).
