Chocolate cornflake cakes, one of the first few cakes that most of use will make and a taste of nostalgia you can beat. Wether you're making these little treats with your children or just want a quick sweet treat for a lazy Sunday afternoon in the house. There's no denying, these gluten and dairy-free cornflake cakes are delightfully moreish. They are super easy to make created in minutes. The only thing challenging about them is waiting a couple hours for them to cool down in fridge. Even I have lost the patience and eaten a gooey cornflake cake that still hasn't set. But even then they still taste delicious!
Why make these gluten and dairy-free chocolate cornflake cakes?
As a lazy sweet treat on a rainy Sunday afternoon. To introduce the little ones to the joys of baking by letting them stir in the cornflakes to the chocolate mixture. Or for a taste of nostalgia by making cakes we all grew up eating. These are just a few reasons why learning this gluten-free cornflake cake recipe is a good thing. Also, if you're eating gluten and dairy-free. You probably never get the opportunity to eat cornflake cakes at bake sales anymore due to being gluten and dairy-heavy. So now's your chance to indulge in this chocolatey treat.
Ingredients you'll need

I always recommend using the best quality ingredients and sustainably sourced when possible. Also, if this is your first time cooking gluten-free for someone with Coeliac disease, I always recommend checking the ingredients label before using because Gluten can sneak into recipes when you least expect it. Below is each ingredient you will need:
• Dairy-free butter - You'll need a vegan block butter in this recipe as it's solid at room temperature. If you tried to use oil instead, it would make the cake too wet. There are tons of dairy-free/vegan block butter on the market these days. I tend to either use Stork Block butter or Naturli Vegan block, the latter is my preferred due to being less processed.
• Dairy-free & gluten-free milk chocolate - I use Nomo creamy chocolate which is gluten, egg, nut, and dairy-free. It does however contain soya. Alternatively, you can use any sweet dairy-free and gluten-free 'milk' chocolate for this recipe.
• Gluten-free cornflakes - Any brand of gluten-free cornflakes will do. You want plain cornflakes, not frosted-style cornflakes as these will be too sweet. Check they are gluten-free certified as some brands like to add barley to their cornflakes or process them in the same factory that handles gluten.
• Golden syrup - Made from cane sugar and naturally gluten-free. The golden syrup will add sweetness to these cornflake cakes while making them softer.
• White chocolate drops (optional) - This is optional but I like to add a little something extra to cornflake cakes. Alternatively, you could add multi-coloured sprinkles, sea salt, freeze-dried raspberry or any other toppings you like. Just ensure they are gluten-free and dairy-free if cooking with those allergens in mind.

Can I make this cornflake cake recipe gluten-free?
As someone with Coeliac disease, all my recipes are 100% gluten-free. Although you can easily trick gluten eaters into thinking it's not gluten-free with how delicious these cornflake cakes are. With this in mind, do be cautious of cross-contamination if your household kitchen isn't 100% gluten-free and you are cooking for someone with Coeliac disease. Also, check all the labels of the ingredients you use in this recipe. Especially the cornflakes, as many brands, such as Kellogg's, use barley extract as an additional flavouring, which contains gluten. Always make sure you use gluten-free cornflakes.
Can I make this cornflake cake recipe dairy-free?
Nearly all of my recipes are dairy-free, as my partner is lactose intolerant. So, I like to ensure my recipes are dairy-free for him! This recipe achieves this by using vegan block butter as its additional source of fat and dairy-free chocolate. I like to use a large Nomo Creamy Choc bar, but any dairy and gluten-free plain 'milk' chocolate bar will do.
Can I make this cornflake cake recipe vegan?
This cornflake cake recipe is 100% vegan. The recipe uses golden syrup, vegan block butter, and vegan 'milk' chocolate, meaning that no animal products are used.
How do I store these cornflake cakes?
These gluten and dairy-free vegan chocolate cornflake cakes should be kept in the fridge in an airtight container. I suggest eating them within the first 3-5 days of making. But will taste best on the same day.
Can I freeze these cornflake cakes?
I would advise against freezing these cornflake cakes due to the change in texture they will experience after thawing. It's best to eat them within 3 days of baking and to store their in an airtight container in the fridge.
Recipe

Here's my recipe for these quick and easy chocolate cornflake cakes that are 100% gluten and dairy-free. Oh, and did we say they are vegan too!
Serving: Approximately 12 cakes
Prep time: 2 hours 5 minutes
Cook time: 5 minutes
Ingredients
170g dairy-free milk chocolate
50g butter
4 tbsp golden syrup
170g cornflakes
White chocolate drops (optional)
Method
Create a Bain Marie: Fill a saucepan up halfway with water, allowing enough space you can place a heat-proof bowl on top that does not touch the water.
Line a muffin tin with cake cases.
Bring the water to a rolling boil then reduce the heat to a gentle simmer.
Put the chocolate, golden syrup, and milk in the heat-proof bowl.
Allow the steam to heat the bowl and melt the chocolate. Stir frequently until all the chocolate and butter have melted. Creating a silky smooth texture.
Remove the bowl of the saucepan. Put onto a heat-proof mat or chopping board.
Pour the cornflakes into the bowl. Stir until all the cornflakes are coated with chocolate.
Fill the cake cases with the chocolate cornflake mixture.
Sprinkle the cornflake cakes with dairy-free white chocolate drops (optional).
Place the cornflake cakes in the fridge for two hours before serving.
Serve, when the cornflake cakes are hard to touch.
